He used ground chicken, instead of cooking the chicken
breasts, shredding it and then making a crust out of that. This recipe
was way easier. And to be honest, it has been so long since we had the
other version, I don't remember how it compared. But this recipe was a
big hit with both of us! We will most definitely be having it
again. In fact, he's already talking about making a Chicken Bacon Ranch
version!
Chicken Crust:
1 package of ground chicken
1 egg
½ cup shredded Mozzarella Cheese
2 TBS Grated Parmesan Cheese
½ tsp Garlic Powder
½ tsp Onion Powder
Salt & Pepper to taste
Mix together and spread onto a parchment paper lined Pizza
Pan – form a round circle about 10 to 12 inches in diameter (1/4 inch thick).
Bake at 425 for 20 to 25 minutes (or until done and chicken
reaches 165 degrees).
Blot dry with a paper towel, to soak up any moisture.
While crust is baking, cook another package of ground
chicken, seasoned with Onion Powder, Garlic Powder, Smoked Paprika, salt &
Pepper.
Once cooked, remove the crust from oven and spread with a
thin layer of Zero Sugar BBQ Sause (we use G. Hughes)
Divide the cooked chicken into 3rds and set 2 of them aside
to be used in other recipes. You will
only be putting 1/3 of the chicken on the pizza.
Spread 1/3 of the cooked chicken on top of the BBQ sauce, then sprinkle with Crumbled real Bacon Bits
and shredded Mozzarella Cheese – then pop back into the oven for 10 minutes. Or until the cheese is melted and starting to turn
brown.
Cut the pizza into 8 slices.
Guestimated Totals for 2 slices:
Calories: 400

Fat: 20 G
Carbs: 5 G
As I said, we were both impressed and will be having this again!
